Tofu Scramble A.K.A. "Feggs"

A simple tofu scramble that can be enjoyed for breakfast over toast.

Ingredients

  • 1 pound Tofu firm or extra firm-drained, no need to press
  • 1/4 cup Nutritional Yeast add more to taste
  • 1/2 tsp Tumeric add more for extra color
  • 1 tsp Crushed garlic
  • Splash Your favorite hot sauce add more to taste
  • 1 tsp Dijon mustard
  • 1 Herb salt Grind the following together to make an herb salt: 1/4 tsp. kosher salt, 1/4 tsp. garlic powder, 1/8 dill, pinch of thyme, 1/4 tsp kalatamak (black salt)

Instructions

  1. 1. Warm a skillet over medium-high heat, crumble tofu into the pan, add turmeric for color, stir in the salts and cook until the tofu is bubbly and steaming- about 6 minutes

  2. 2. Stir in the nutritional yeast, garlic, hot sauce and mustard.


  3. 3. Cook for another 3-4 minutes to allow all of the ingredients to blend together.  

  4. 4. Remove from heat and serve over toast or by itself.
