Want a great item for breakfast that’s quick and easy and delicious? We call them “Feggs” for “fake eggs” as we learned about them soon after we began eating a whole food plant-based diet. We were longing for some scrambled eggs so we adapted a tofu scramble recipe and “Feggs” were born!
Slowing Down the Pace
We intentionally guard our Saturday mornings and let the day unfold organically. We tend not to schedule any events if possible so that we can slow down the rapid pace of life and reset. Not that we are always successful, but more often than not, we are. As a result, we enjoy eating a breakfast that we normally don’t eat during the week. This can include pancakes, or waffles or feggs.
This morning we opted for feggs and followed it up with a walk in our neighborhood. We dubbed it “feggs and fitness” since we made sure to get out and move around a bit. Take a look at our quick video to see what we mean.

Tofu Scramble A.K.A. "Feggs"
A simple tofu scramble that can be enjoyed for breakfast over toast.
Ingredients
- 1 pound Tofu firm or extra firm-drained, no need to press
- 1/4 cup Nutritional Yeast add more to taste
- 1/2 tsp Tumeric add more for extra color
- 1 tsp Crushed garlic
- Splash Your favorite hot sauce add more to taste
- 1 tsp Dijon mustard
- 1 Herb salt Grind the following together to make an herb salt: 1/4 tsp. kosher salt, 1/4 tsp. garlic powder, 1/8 dill, pinch of thyme, 1/4 tsp kalatamak (black salt)
Instructions

1. Warm a skillet over medium-high heat, crumble tofu into the pan, add turmeric for color, stir in the salts and cook until the tofu is bubbly and steaming- about 6 minutes

2. Stir in the nutritional yeast, garlic, hot sauce and mustard.

3. Cook for another 3-4 minutes to allow all of the ingredients to blend together.

4. Remove from heat and serve over toast or by itself.
