In 2013, my family took a bold step towards a healthier, more sustainable lifestyle by embracing a plant-based way of eating. Little did we know, this decision would not only reshape our diets but also lead us on a culinary adventure, as we felt like we were starting over in the kitchen creating five plant-based weeknight dishes.
